Roasted Tomato Chickpea Soup



A comforting vegan soup bursting with the flavors of roasted tomatoes and chickpeas, perfectly seasoned with aromatic spices.

Ingredients:

  • 4 cups cherry tomatoes, halved
  • 1 can 15 oz chickpeas, drained and rinsed
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions:

Get the oven ready by heating it up to 400F 200C

Add the chickpeas, onion, garlic, cherry tomatoes, and thyme to a baking dish

Add the salt and pepper

Put the pan in a hot oven and roast for 25 to 30 minutes, or until the chickpeas are crispy and the tomatoes turn brown

Put the roasted mixture into a pot

Set the pot on low heat and add the vegetable broth

Blend the soup until it's smooth with an immersion blender

Let the flavors blend for another 5 to 10 minutes

If necessary, change the seasoning

Add fresh basil leaves on top and serve hot

Oh-So-Good Crock Pot Chicken



This Oh-So-Good Crock Pot Chicken recipe makes a tasty, easy meal that cooks up great in the slow cooker. Balsamic vinegar, honey, and herbs work together to make a tasty sauce that coats the tender chicken breasts. This dish goes well with many different types of side dishes.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1/2 cup balsamic vinegar
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons cornstarch optional, for thickening

Instructions:

In the slow cooker's bottom, put chicken breasts

Chicken broth, honey, minced garlic, oregano, basil, thyme, salt, and pepper should all be mixed together in a bowl

Mix well

Add the mix to the slow cooker with the chicken

When the chicken is done, cover it and cook on low for 6 to 8 hours or high for 3 to 4 hours

If you want to thicken the sauce, you can make a slurry of cornstarch and water and add it to the slow cooker in the last 30 minutes of cooking

Remove from the heat and use two forks to shred the chicken

Then, mix it well with the sauce

Warm it up and serve it with your favorite side dishes or over cooked rice or pasta

T-lish Tacos al Pastor



This is a traditional Mexican street food dish made with grilled pork that has been marinated and served with sauted onions, fresh cilantro, diced pineapple, and a squeeze of lime.

Ingredients:

  • 2 pounds boneless pork shoulder, thinly sliced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 1/4 cup white vinegar
  • 1/4 cup orange juice
  • 1/4 cup pineapple juice
  • 2 tablespoons achiote paste
  • 2 tablespoons vegetable oil
  • 1 onion, thinly sliced
  • 8 small corn tortillas
  • Fresh cilantro, chopped, for garnish
  • Diced pineapple, for garnish
  • Lime wedges, for serving

Instructions:

Smoked paprika, chili powder, cayenne pepper, salt, pepper, white vinegar, orange juice, pineapple juice, and achiote paste should all be mixed together in a bowl

To make the marinade, mix it well

Put the thinly sliced pork shoulder in a big bag or container that can be closed again and again

On top of the pork, pour the marinade

Close the bag and put it in the fridge for at least two hours, or better yet, overnight for the best results

Put vegetable oil in a large skillet and heat it over medium-high heat

Add the sliced onions and cook them until they get clear and a little caramelized

It will take about 5 to 7 minutes of cooking after adding the pork slices that have been marinated

To make the corn tortillas soft, heat them in a dry skillet or the microwave

To put the tacos together, cover each tortilla with a lot of the cooked al pastor pork

Add chopped cilantro, diced pineapple, sauted onions, and a squeeze of fresh lime juice on top

Serve your tasty Tacos al Pastor right away and enjoy them!

Decadent Vegan Chocolate Chia Pudding with Coconut Cream Topping



If you want to treat yourself, try this rich and creamy vegan chocolate chia pudding with coconut cream on top. You can eat it without feeling bad, and it will satisfy your sweet tooth.

Ingredients:

  • 1/4 cup chia seeds
  • 1 cup almond milk
  • 3 tablespoons cocoa powder
  • 2 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 cup coconut cream
  • 1 tablespoon powdered sugar
  • 1/2 teaspoon coconut extract

Instructions:

Pour almond milk, cocoa powder, maple syrup, and vanilla extract into a bowl

Mix the chia seeds well

The mixture should be put in the fridge for at least two hours or overnight so that it can thicken

Put powdered sugar, coconut extract, and coconut cream in a different bowl

Gluten-Free Monkey Bread



Enjoy a gluten-free twist on the classic monkey bread recipe. This sweet and sticky treat is perfect for breakfast or brunch, and it's sure to be a crowd-pleaser!

Ingredients:

  • 2 1/2 cups gluten-free all-purpose flour
  • 2 tsp xanthan gum if not included in the flour mix
  • 1/2 cup granulated sugar
  • 1 tsp salt
  • 2 1/4 tsp active dry yeast
  • 1/2 cup warm milk 110F
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • For coating:
  • 1 cup granulated sugar
  • 2 tsp ground cinnamon
  • 1/2 cup unsalted butter, melted
  • For glaze optional:
  • 1 cup powdered sugar
  • 2-3 tbsp milk
  • 1/2 tsp vanilla extract

Instructions:

Warm the milk and yeast together in a bowl

Allow it to sit for 5 to 10 minutes until it foams up

In a different bowl, mix the sugar, salt, gluten-free flour, and xanthan gum if you need it with a whisk

In a separate bowl, melt the butter and add the eggs and vanilla extract

Mix the yeast mixture well

Slowly add the wet ingredients to the dry ones and mix them together until a dough forms

Cut the dough into little chunks and roll each one into a ball that's about an inch across

For the coating, mix the cinnamon powder and granulated sugar in a different bowl

First, dip each dough ball into the melted butter

Then, roll it in the cinnamon-sugar mix until it is completely covered

Cover the dough balls and put them in a bundt pan or another baking dish that has been greased

You can stack them if you need to

Put a clean kitchen towel over the pan and let the dough rise for 30 to 45 minutes

Turn on your oven to 350F 175C while the dough is rising

Before you put the monkey bread in the oven, heat it up

Bake it for 25 to 30 minutes, or until it's golden brown and done

Pour the glaze into a bowl and whisk the powdered sugar, milk, and vanilla extract together until the mixture is smooth

Start baking the monkey bread at the same time

It's time to take the monkey bread out of the oven and let it cool for a while

If you want, you can drizzle the glaze over the warm monkey bread

When you serve the gluten-free monkey bread warm, you can pull apart the tasty pieces that are covered in cinnamon sugar

Ukrainian Pork Stew

Ingredients:

  • 2 lbs pork shoulder, cubed
  • 2 onions, finely chopped
  • 3 carrots, sliced
  • 3 potatoes, peeled and diced
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 cup beef broth
  • 2 bay leaves
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • Fresh parsley for garnish

Instructions:

In a large pot, heat vegetable oil over medium heat

Add pork cubes and brown on all sides

Add chopped onions and minced garlic, saut until onions are translucent

Stir in tomato sauce, beef broth, bay leaves, paprika, salt, and pepper

Bring to a simmer, then cover and cook on low heat for 1

5 hours

Add sliced carrots and diced potatoes, continue cooking for an additional 30 minutes or until vegetables are tender

Adjust seasoning if necessary

Garnish with fresh parsley before serving

Homemade Artichoke Pizza with Spinach SOOO GOOD



Enjoy the deliciousness of artichoke pizza with spinach that you made yourself. This pizza is full of great flavors and is great as a meal or snack. Just right for pizza night!

Ingredients:

  • 1 pizza dough store-bought or homemade
  • 1/2 cup pizza sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup marinated artichoke hearts, drained and chopped
  • 1 cup fresh spinach leaves
  • 1/4 cup sliced black olives
  • 1/4 cup sliced red onion
  • 1/4 cup crumbled feta cheese
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes optional
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

Instructions:

Set your oven to 475F 245C before you start cooking

On a lightly floured surface, roll out the pizza dough to the thickness you want

Place the dough on a pizza stone or baking sheet after it has been rolled out

Don't cover the dough with pizza sauce all the way to the edges; leave a little space for the crust

Add the shreds of mozzarella cheese on top of the sauce

Put the chopped artichoke hearts, fresh spinach leaves, sliced black olives, and red onion on top of the cheese in an even layer

Break up the feta cheese and sprinkle it on top

Use black pepper, salt, dried oregano, and crushed red pepper flakes if you want to to season the pizza

Put the olive oil on top of the pizza

Place the pizza in an oven that has already been heated up

Bake for 12 to 15 minutes, or until the crust is golden brown and the cheese is bubbly and a little browned

Take the pizza out of the oven and let it cool down a bit before cutting it
