Ingredients:
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 cup bulgur wheat
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup grated Parmesan cheese
- 1/4 cup Caesar salad dressing
- 1 lemon, juiced
- Romaine lettuce leaves, for serving
Instructions:
Warm the grill up to a medium-high level
Add salt and pepper to the chicken breasts and brush them with olive oil
Chicken should be cooked all the way through after being grilled for 6 to 7 minutes on each side
Take a break for a few minutes and then cut it into strips
Bring 2 cups of water to a boil in a saucepan
Put the bulgur wheat on top, cover, and take it off the heat
Leave it alone for 15 minutes, or until the water is gone
Use a fork to fluff it up
Cooked bulgur wheat, cherry tomatoes, cucumber, parsley, mint, and Parmesan cheese should all be put together in a large bowl
Salt and lemon juice should be mixed together in a small bowl
Pour it over the salad and toss it to mix
Lay a bed of Romaine lettuce on each plate
Then add the tabbouleh mixture on top of each plate
Finally, place grilled chicken strips on top of each plate
If you want, you can add more Parmesan cheese as a garnish
